Ingredients: · 2 to 3 lb. corned-beef brisket brine and seasoning packet (bay leaves, coriander, etc.) · 12 oz. of Guinness · 2 to 3 white potatoes (cut into 1″ cubes) · 6 carrots (peeled and cut into 1″ pieces) · 1/4 to 1/2 head of cabbage (to put in at the end) · 2 smaller yellow onions, quartered · 2 cloves garlic, finely chopped (or 2 tsp minced garlic) · 1 Tbsp dill weed · ¼ cup brown sugar · Enough water to almost cover your brisket (varies each time) Directions: 1. Place the brisket, the brine and the seasonings into a large crock pot. Make sure to add water to almost completely cover the brisket. 2. Add the cut carrots, potatoes and onions. 3. In a bowl, mix together the Guinness, garlic, dill weed, and brown sugar and pour all over everything. Turn on crock pot and set on low for 6 hours. Up to 8 hours is ok if you can't get to it before. 4. At the 5-1/2 hour point (or as soon as you can after that), cut up the cabbage and place it into the crock pot, getting it mixed in with the rest of the vegetables and continue to cook for an additional half hour. 5. Shut off the crock pot and move everything over to a serving plate and serve.
