(Note: Jonathan's version used peach preserves, rather than apricot preserves.) Ingredients: (2) 1/8-inch slices of roast turkey breast, cut in half and stacked to form 4 half circles of turkey meat 1 half circle of brie cheese (about ¼-inch thick) About 2 to 3 tablespoons apricot preserves (or peach preserves) French or Italian bread, sliced about 5/8-inch thick and toasted butter for toasting bread fresh outer iceberg lettuce leaves fresh thin-sliced tomatoes Prepare your bread by slicing off two slices of Italian or French bread per sandwich. Spread a very small amount of butter on both sides of each bread slice. Place the slices in a skillet over medium heat and toast until browned and crunchy. Remove from heat. Choose two slices of bread that match in size and place your half-circles of turkey breast meat on one slice of the toasted bread. Place a half-circle of brie cheese on top of the turkey. A close substitute is the Heinz Caeser Salad Cream. Mayonnaise can be used as a last resort but it needs to be diluted with vegetable oil as it is too thick for the Nigerian Salad recipe.

Before you put in order the Nigerian Salad:

Wash and cook the Irish potatoes till done. The eggs should also be hard-boiled. To save time, the Irish potatoes and the eggs can be cooked in the same pot as they need practically equal number of time to get done.

All the vegetables need to be washed. Cut the lettuce into thin shreds. Scrape and shred the carrots using a grater. Peel and cut the boiled potatoes into sizeable cubes. Peel, take off the seeds and cut the cucumber as shown. If you want more green color in your salad, you may peel the cucumber in stripes. Remove the seeds from the plum tomatoes and cut into small cubes. Place all the cut vegetables in isolate containers. Open the sweet corn and drain the preservation water. Rinse the seeds and set aside. Also open the baked beans tin and set aside. Remove the shells of the hard-boiled eggs, slice with an egg slicer and set aside.

Follow these steps when preparing the Nigerian Salad

With the exception of the egg, start putting the salad ingredients in small batches into a big salad bowl. You can start with the lettuce, followed by the tomatoes, then potatoes, sweet corn, baked beans, cucumber, carrots then back to lettuce. Repeat the process till all the ingredients are exhausted. This method of manufacture the Nigerian Salad helps the juice from each of the ingredients to seep into others. Now, place the sliced eggs on the salad, outside the top. Cover the bowl and place in the fridge for at least one hour. This is to give all the Nigerian Salad ingredients time to blend with each other. In addition, the Nigerian Salad is best served chilled. Serve with a salad dressing of your selection but as mentioned earlier, the excellent Heinz Salad cream works best with the Nigerian Salad.

If you prefer your own salad crunchy, you can substitute the lettuce with cabbage. Instead of taking out the lettuce entirely, you can use the two as the lettuce adds a green color to the salad. Afterall this recipes is not only about the taste but about color too.

2 cans shredded chicken breasts

1 cup salsa

1 can enchilada sauce

24 oz can diced green chiles

4 cups shredded cheddar cheese

1 can cream of chicken soup

14 oz can sliced black olives

2 thinly sliced green onions

10 corn and flour tortillas

Mix chicken, salsa, enchilada sauce, green chilis, and soup in a bowl. Cut corn and flour tortillas into 1 inch pieces, mix pieces together. Place a layer of sauce mixture on the lowest of the crockpot. Place a layer of tortillas, then a layer of cheese. Repeat until all the sauce mixture has been used. Top with cheese, olives, and green onions. Cover and cook on low 6 hours. If desired, serve with sour cream, salsa, guacamole, and tortilla chips.

Chicken Tortilla Soup

Easily one of my beloved recipes - a wonderful "throw it in and let it cook" soup. See the notes below for and extra flavorful twist. Ingredients:

1 ½ pounds shredded cooked chicken

1 drained 14.5 oz can diced tomatoes

1 - 10 oz can enchilada sauce

2 medium chopped onions

14 oz can chopped green chiles

2 cloves minced garlic

2 cups water

1 - 14 ½ oz can chicken broth

1 tsp cumin

1 tsp chili powder

½ tsp black pepper

1 large bay leaf

1 tbsp cilantro

1 ½ tsp southwest seasoning mix

1 - 10 oz pkg frozen corn

Mix all ingredients in crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours. If desired, serve with sour cream and baked tortilla strips. For baked tortilla strips, preheat oven to 400*. Lightly brush both sides of tortillas with vegetable oil, cut into strips. Spread on ungreased cookie sheet and bake for 10-15 minutes.

Notes: For extra flavor, I make this in two steps. First, I put 1-1 ½ pounds of boneless skinless chicken breasts in a crockpot with 1 ½ cups water (or 1 can chicken broth) and Mexican seasonings. (A container of taco or fajita seasoning or southwest seasoning mix works well.) Cover and cook on high 3-4 hours. Remove chicken and shred for soup.

Often, I will make 2-3 pounds of chicken to make soup along with shredded chicken tacos or fajitas.

Crockpot Taco Appetizer

Although I serve with chips, this could be a main meal by using hard or soft shelled tacos instead!

Ingredients:

2 pounds ground beef

½ cup water

1 envelope taco seasoning

18 ounce can tomato sauce

1 undrained 14.5 oz can diced tomatoes

2 cups shredded cheddar cheese

1 cup sour cream

3 chopped green onions

1 cup sliced black olives

1 bag tortilla chips

In a skillet, brown meat over a medium flame. Drain and add to crockpot. Add water, taco seasoning, tomato sauce, and diced tomatoes. Cover and cook on low 6 hours. Serve with toppings such as cheddar cheese, sour cream, green onions, black olives, and other desired toppings. Notes: As mentioned, this could actually be a main meal by serving with hard or soft shelled tacos rather than tortilla chips.

1 lb salted cod fish, cooked and flaked

Directions:

Soak salted cod fish in water for at least 4 hours, and preferably overnight, changing water a minimum of three times.

In a heavy pan heat the oil and sauté the onions and sweet pepper until soft. Set aside. Sift the flour, baking powder and salt/pepper in a bowl. Make a well in the centre and pour egg, milk and butter and mix together lightly. Fold in cooked onions, sweet peppers, hot pepper, corn, chives and fish. Batter should be thick and slightly lumpy. If the batter is too watery, add sifted flour to accomplish the desired consistency.

In a large deep pan or deep fat fryer, heat cooking oil to a temperature of 340 degrees F. Drop batter by the tablespoon into hot oil but do not crowd. Cook until golden brown and drain on paper towels. Fish cakes may be kept warm in a 250 degree F oven, until ready to serve. Serve with Bajan tartar or sweet chili dipping sauce.

Chef's Note: Dip the spoon in the hot oil to coat each time in order to forestall batter from sticking to the spoon.

Bajan Tartar Sauce

½ cup whole mayonnaise

2 tbsp mustard

2 tbsp drained sweet relish

1 tbsp finely minced parsley

1 tbsp finely minced onion

Bajan peppersauce to taste

Pinch of sugar

Salt and pepper to taste

Mix all ingredients in a bowl and chill at least one hour before serving.

Grandma's popular Sugar Cookie

1 cup white sugar

1 cup powdered sugar

1 cup butter

2 eggs beaten

1 tsp cream of tarter

1 tsp baking soda

1 tsp vanilla

4 cups flour

½ cup corn oil

Cream the sugars and butter together. Mix the beaten eggs, vanilla and corn oil, in. Add the dry ingredients .Mix all the ingredients well and chill overnight.
Bake at 375 F for 8-10 minutes....Do Not Overcook.

We used to make the funniest colors to decorate the cookies, most of them looked inedible. They tasted heavenly, though. We figured if we made them look gross enough, the adults would leave them alone. We were wrong. everyone knew they were Grandma's famed sugar cookies from her handed down formula book. 2 cups of powdered sugar

½ cup butter melted

1 ½ T Milk

1 tsp vanilla

1 (16oz.) can cut green beans, drained

1 (10 3/4 oz.) can condensed tomato soup

5 hot cooked medium potatoes

1/2 cup warm milk

1 beaten egg

1/2 cup shredded American cheese

In a large skillet, cook meat and onion until meat is lightly browned and onion is tender. Add salt and pepper. Add drained beans and soup; pour into greased 1 1/2 quart casserole. Mash potatoes while hot; add milk and egg. Season with salt and pepper. Spoon in mounds over casserole. Sprinkle potatoes with cheese. Bake in a 350 degree oven for 25 to 30 minutes.

5. Bake 45 minutes to an hour, or until golden brown.
6. Remove casserole from oven and top evenly with cheddar cheese.
7. Return to oven until cheese is melted, practically 5 to 10 minutes.
8. Remove from oven and cool 5 to 10 minutes before serving.

2 lbs. Striped Bass fillets, trimmed and cut into serving size portions 2 tomatoes, medium size, thinly sliced 1/2 cup green pepper, chopped 1 cucumber, small, thinly sliced 1/2 cup onion, chopped 1 clove garlic minced 2 tbsp. Butter or margarine 2 tbsp. Parsley 1 tbsp. White wine 2 tbsp. Lemon juice 1/2 tsp. Marjoram

Prepare striped bass fillets by cutting fillets in half removing the dark flesh along the dark lateral line that runs through the town of the fillet. Also take off any dark flesh on the side of the fillet that had the skin and along the belly area. Cut trimmed fillets into serving size portions and place in a greased baking dish. Arrange tomato and cucumber slices on top of the fish. In a saucepan, cook onion, green pepper and minced garlic in butter until onion is tender but not brown. take off from heat and stir in parsley, wine, lemon juice and marjoram. Spoon sauce over the fish. Bake in an oven preheated to 375¡F for 20 to 25 minutes or until fish begins to flake beyond doubt with a fork.

South Carolina Striped Bass

Ingredients:

2 Striped Bass Fillets

1 cup white corn meal

1 cup all purpose flour

2 cups buttermilk

Lemon Pepper seasoning, to taste

Directions:

1. Preheat oil in fryer or Dutch oven over medium-high heat.

2. Cut bass into nuggets, place in a bowl with buttermilk and allow to soak

(refrigerated) for at least four hours.

3. Drain buttermilk, but do not rinse fish.

4. Couple corn meal and flour in a zipper top plastic bag.

5. Add fish pieces to the flour blend a few at a time, shaking bag normally to coat. 6. take off fish nuggets and carefully place into hot oil. 7. Fry for 3-5 minutes or until golden brown. 8. take off from oil, drain, and sprinkle with lemon pepper seasoning.

I know that we all the time teach our children not to cheat, but I have to admit that cheating in cooking is sometimes a astonishing thing. By cheating with this recipe, I've created the seafood chowder I love without a lot of establishment and hassle (and added a few extra twists). Enjoy!

2 cans cream of chicken soup

Crock Pot method for Creamy Seafood Chowder

2 cans cream of potato soup

1 tsp garlic powder

2 tbsp minced onion

1 cup half and half

1 cup milk

¼ tsp black pepper

1 cup celery

2 10 ounce cans of clam, undrained

1 tsp creole seasoning

4 medium potatoes, peeled and chopped

1 16 oz container freezing corn

1 pound pre-cooked tail off shrimp

Spray crock pot with cooking spray. couple all ingredients except shrimp, mix well. Cover and cook on low 7-8 hours or high 3-4 hours. Add shrimp, cover and cook on high an further 30-45 minutes until shrimp is tender.
